Cecile Cary of Dayton says she copied herrecipefor Turtle Cookies from the St. Paul Pioneer Press in the 1950s and has been making them since.
Makes 30 cookies
1 1/2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup butter
1/2 cup light brown sugar
1 egg, plus one egg, separated
1/2 teaspoon vanilla
1/8 teaspoon maple flavoring
90 pecan halves
Preheat oven to 350 degrees.
Sift flour, soda and salt together. Cream butter and sugar. Add egg and egg yolk to creamed mixture. Blend in flavorings. Add dry ingredients gradually and mix thoroughly.
On a baking sheet, arrange pecan halves, rounded side up, in groups of three, like the head and legs of a turtle.
Shape dough into balls, dip in egg white and press on nuts. Bake for 10 minutes.
FROSTING
1 tablespoon butter
2 squares unsweetened baking chocolate
1/4 cup milk
1/2 cup confectioners sugar
Melt butter, milk and chocolate in double boiler. Remove from heat and add sugar. Beat until smooth and glossy and frost cookies.
