Make-Ahead Mashed Potato Casserole

Mashed potatoes are combined with cream cheese and sour cream.

Makes 12 servings
5 pounds baking potatoes, peeled and cut into chunks
1 to 2 teaspoons salt, or to taste
1 (8-ounce) package cream cheese, cut into chunks, at room temperature
1 cup sour cream
1/2 cup milk, heated
1/2 teaspoon white pepper
Black pepper

In a large pot, cover potatoes with 1 inches of lightly salted water. Partially cover and boil for 20 to 30 minutes, or until tender. Drain well.

Return potatoes to pot. Add cream cheese. With an electric mixer, mash potatoes until cream cheese melts. Beat in sour cream and milk. Season with additional salt and pepper.

Transfer to a buttered 9-by-13-inch baking dish.

When ready to cook, preheat oven to 375 degrees. Bake for 30 to 40 minutes, or until heated through.

Approximate nutritional analysis per serving: 261 calories, 11 g fat, 30 mg cholesterol, 615 mg sodium.
