Blueberry Crumble

In the beginning, my It's Simple column was long on easy, family recipes from my mother and sister, like this Blueberry Crumble recipe from my sister. Just this year a local chef told me its a favorite recipe that she had just made that day.

It is such an easy dessert because blueberries, unlike most other fruits, require no preparation beyond a quick rinse. And if you like more topping you can double the crumble.

Makes 4 to 6 servings

3 cups blueberries, rinsed and drained

12 tablespoons sugar, divided use

juice of one lemon

1/4 teaspoon cinnamon

3/4 cup flour

1/3 cup butter

1/2 teaspoon salt

Put the drained berries in a buttered square baking dish. Add 6 tablespoons of the sugar, lemon juice and cinnamon and stir to coat the berries.

Combine the flour, butter, remaining 6 tablespoons sugar and salt and mix with a fork or your fingertips until the mixture is crumbly. Sprinkle the mixture over the berries and bake for 30 to 40 minutes until the fruit is bubbling and topping is lightly browned.

Serve as is or with ice cream.
