This guacamole recipe is from Frida's Fiestas, Recipes and Reminiscences of Life With Frida Kahlo by Guadalupe Rivera and Marie-Pierre Colle (Potter, $35). Kahlo, an artist, was married to Mexican painter Diego Rivera, and they were known for their entertaining in the 1940s.
Makes about 3 cups
3 to 4 ripe Haas avocados
Juice of one small lime
1/2 onion, minced
1 large, peeled and seeded tomato, chopped
3 to 4 chipotle chiles in adobo, chopped
1/4 cup minced cilantro
1/4 to 1/2 teaspoon salt
Cut the avocados in half and remove the pits. Use a large spoon to scoop the flesh into a bowl. Use a fork to mash slightly, leaving it chunky.
Squeeze the lime juice over the avocados. Stir in onion, tomato, chipotle chiles and cilantro, then season with salt to taste.
Serve with tortilla chips or chicharrones.
