1 pound fresh Italian or Polish sausage
2 green bell peppers *
1 pound redskin potatoes, unpeeled
1 large onion
3 tablespoons olive oil
Salt and freshly ground black pepper
Preheat oven to 425 degrees. Prick sausages and blanch in simmering water briefly to remove excess fat. Trim peppers, removing seeds, and cut into rough 1-inch sections. Wash potatoes and cut into 1-inch cubes. Cut onion into similar sized cubes.
Pile vegetables in a shallow baking dish. Drizzle oil over and mix to coat the vegetables. Sprinkle with salt and pepper and top with sausages.
Bake for 30 minutes, stirring several times, until potatoes are tender.
* If you are feeling flush, use red bell peppers.
