RHUBARB BREAD PUDDING
2 cups diced fresh rhubarb
3 /4 cup sugar
1 tablespoon grated lemon rind
1 1 /2 tablespoons lemon juice
1 cup bread crumbs
1 cup milk
1 egg, beaten
Mix all together and put into a buttered casserole. Dot with butter. Bake covered for 1 hour at 375. Serves 6.
