Delicious Green Beans
6 bacon slices
1 small onion, sliced
3 teaspoons cornstarch
1/2 teaspoon salt
1/2 teaspoon dry mustard
homegrown green beans or the equivalent: 2 cans (141/2 ounce size) green beans — drained; half the liquid reserved
2 tablespoons brown sugar
2 tablespoons white vinegar
Fry bacon until quite crisp; crumble. Reserve 11/2 tablespoons of bacon drippings. Add the onion to remaining drippings in pan and saute until lightly browned. Stir in cornstarch, salt and mustard. Stir in reserved green bean liquid and bring to a boil. Stir constantly. Blend in brown sugar and vinegar; add drained green beans and heat through.
At serving time, garnish with crumbled bacon.
