You-need-a-kick-up-beef broth

about 1 tablespoon olive oil

1 large onion, diced

2 beef bouillon cubes

2 1/2 cups water

2 tablespoons chives

2 (1-ounce) slices swiss cheese

small pieces of corn bread or 2 potato pancakes

2 dollops of sour cream (optional)

On these stove top in a large pot, heat olive oil; add onion and sauté until onions are transparent and then caramelized (turn brown). Add beef bouillon cubes and water. Add chives; they will float on top. Just before serving, place a 1-ounce slice of swiss cheese in the bottom of each bowl; then microwave each for 20 seconds. Remove bowl from microwave and add soup. Add small pieces of corn bread or a potato pancake to the the soup. If desired, put a dollop of sour cream in the center of each bowl of soup.

Yield: 2 servings.
