Avocado Chorizo Bites

1 ripe Hass avocado

½ teaspoon salt, or to taste

1 teaspoon lemon juice

2 to 3 teaspoons chipotle hot sauce, to taste

Chorizo sausage, sliced thinly (if you can not find chorizo, pepperoni is a suitable substitute), as needed

Cheddar cheese, sliced thinly

Water crackers or any plain cracker, as needed

Puree avocado in food processor until smooth. Place puree in a bowl, stir in salt, lemon juice and chipotle hot sauce; mix well.

Build your snacks starting with a cracker; place a slice of Cheddar cheese on the cracker; spoon some avocado puree on the cheese; place a chorizo slice on the avocado puree. (If you want to dress it up a bit, pipe the avocado puree on using a pastry bag and a large star tip.) Serve snacks on a plate, or serving platter garnished, if desired, with avocado slices.

Makes about 24 snacks.
