Classic Guacamole
2 ripe Hass avocados
½ Spanish onion, diced
1 chopped jalapeno
Juice of 1 lime
Salt, to taste
1 plum tomato, diced
2 tablespoons chopped cilantro
Spoon the flesh out of the ripe avocados, cut into medium chunks, and set aside in a bowl.
In another bowl, marinate the diced onion and jalapeno with the lime juice and a pinch of salt for 3 minutes, then add the diced tomato, cilantro and avocados.
Mash all the ingredients together, to consistency you prefer; check the seasoning. Serve with warm tortillas or chips.
Makes 4 servings.
