Fresh apple cake
3 eggs
1 3/4 cups granulated sugar
1 cup vegetable oil
2 cups all-purpose flour
1/2 to 1 cup chopped nuts (She uses black walnuts.)
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
5 apples, pared, cored and sliced
powdered sugar, to garnish top of cake
In a large bowl, beat eggs and sugar with an electric mixer for 5 minutes, or until the sugar is dissolved. Add vegetable oil, flour, cinnamon, baking soda, and salt. Beat on a medium speed until well-mixed. Mix in apples and nuts. (Note: The batter will be thick.) Spread batter in an ungreased 9 x 13 x 2-inch baking pan or a bundt pan. Bake at 350 degrees for 1 hour. Cool in the pan; then sprinkle with powdered sugar.
Yield: 12-16 servings.
